Best ever bagel dip!

A few years ago I had met my friend Mandi at a nearby hotel to swim with our kids, back when she only had four and me two. Now, when we meet up our total kids amount to 8. Greatly outnumbering the adults. 

Mandi had made this dip and I'm not much of a bagel fan but this is delicious! My kids also love it! I've tweaked it some from her original recipe.

Best Ever Bagel Dip
3/4 cup sour cream
3/4 cup mayo (I use light mayo)
2oz cream cheese, softened
1cup dried beef, Mandi used corned beef
1/2 tsp dill
1/2 tsp garlic salt
Pepper

Just mix all the ingredients together and stir. I refrigerate four hours before serving. I tear my bagels apart or if you prefer use a kitchen scissors to cut them.

Turkey spinach burger with feta

During the summer we spend a lot of time at the lake and then need quick supper ideas. Given we spend almost 5 months of the year with snow covering our grills, when warmer weather comes around we all turn into grill masters!

This recipe is super easy and incorporates vegetables. Which is a win win for all of us considering no one wants to spend a lot of time cooking :) 


Turkey spinach burgers with feta
1 pound ground turkey
1 box frozen spinach (thawed and drained)
1/2 cup feta- I used a sun dried tomato feta you can use plain or whatever flavor you like
Salt
Pepper

Mix everything together is a bowl. Form into patties and toss on the grill.

These taste fabulous!

Chicken bacon ranch pizza pasta


 I love pizza. I think I could eat it everyday. So I decided to take the best of pizza toppings and add it to pasta! It's a great idea, trust me :)

Ingredients
1 lb Penne noodles
2/3 cup ranch dressing
1/2 cup pizza sauce
1/2 whipping cream
2 cups chicken cut up
2 cups mozzarella cheese
Bacon, I used one package cooked and crumbled

Preheat oven to 350 degrees cook noodles according to al dente directions on box, rinse and return to pan. Add ranch, sauce, chicken and whipping cream and stir untill coated. Transfer noodle mixture to greased 9x13 pan. Bake for 20 min then add your mozzarella cheese and bacon to top and bake another 10 min or until cheese is bubbly.

Spicy Bacon Chicken Wrap




I love wraps! They are so simple to make and you can add anything you have on hand, plus they are easy to take on the go.

Ingredients
1 wheat wrap
2 slices bacon
Chicken breast 
Romaine lettuce
2 tbsp spicy red pepper hummus

Spread the hummus on the wrap and then layer the other ingredients and wrap


Delicious!
